1 carb, 1/2 fat
200g or 2 medium yellow potatoes
1/2 TBS olive oil
1 tsp dried basil
1/2 tsp garlic salt
4 TBS marinara
2 slices provolone cheese (2 slices Follow Your Heart dairy free)
Heat oven to 425 and line a baking sheet with aluminum. Lightly spray to avoid sticking.
Cut each potato into 4 slices. They should not be thick, but not thin like potato chips; roughly 1/4th inch.
In a small bowl, mix potatoes in olive oil, basil and garlic salt.
Place potatoes on baking sheet and cook for 15 minutes.
After 15 minutes, flip and put 1/2 TBS marinara on potato. On top of that, put 1/4 slice cheese.
Stick back in oven and cook for about 5 more minutes or until cheese is melted.
Allow to cool and enjoy!
